Carrot and Ginger Soup Recipe

🥕Nourishing Carrot and Ginger Soup: A Healthy Comfort Food Recipe

 

Ingredients:

• 500g carrots, peeled and chopped
• 1 onion, diced
• 2 cloves garlic, minced
• 1-inch piece of fresh ginger, grated
• 4 cups vegetable broth
• 1 tablespoon olive oil
• Salt and pepper to taste
• Optional: fresh herbs for garnish (like parsley or coriander)

Instructions:

1. Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the onion and garlic, sautéing until softened (about 5 minutes).
2. Add Carrots and Ginger: Stir in the chopped carrots and grated ginger, cooking for another 5 minutes until the carrots start to soften.
3. Pour in Broth: Add the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 20 minutes, or until the carrots are tender.
4. Blend the Soup: Remove the pot from heat. Use an immersion blender to purée the soup until smooth. Alternatively, you can transfer the soup to a blender in batches.
5. Season: Taste the soup and add salt and pepper as needed.
6. Serve: Ladle the soup into bowls and garnish with fresh herbs if desired. Enjoy warm!
